Mackerel has a blue-green back, a silver-white belly, blue-black stripes and a deeply incised tail fin which makes it a treat for the eye. The meat is firm and fat yet quite juicy and soft. It has an oily, smoky smell.

Beechwood is commonly used to give the mackerel its characteristic robust aroma and flavours. Mackerel has higher omega-3 levels than any other commonly eaten fish and is also a good source of vitamin B6, vitamin D, selenium, and niacin, which are all important for our health.
