This traditional recipe combines whole chicken with the unique flavours of wild-caught conch meat, tender pork ribs, and nourishing ingredients like Chinese yams, goji berries, and dried longans.
Ingredients (For 4 Persons)
Whole chicken
Frozen Conch Meat: 600g
Pork ribs: 600g
Chinese yam: 100g
Goji berries: 40g
Dried longans: 40g
Dried red dates: 8
Water: 2L
Salt: to taste
Instructions
1. Wash the chicken and remove the skin. Blanch it in boiling water for 10 minutes.
2. Rinse the pork ribs and blanch them.
3. Scrub the conch meat clean and remove the innards.
4. Put all the ingredients into a pot and add water. Cover the pot and simmer for 2 hours.
5. After cooking, remove the lid and skim off any fat from the surface of the soup. Season with salt to taste.
Lobster Rolls

Ingredients (For 4 Persons)
Cooked lobster meat: 500g
Mayonnaise: 1/4 cup
Lemon juice: 2 tablespoons
Celery, diced: 1/2 cup
Fresh chives, chopped: 2 tablespoons
Salt and pepper: to taste
New England-style rolls: 4
Butter: for toasting rolls
Lettuce leaves: for serving (optional)
Instructions
1. In a bowl, combine the cooked lobster meat, mayonnaise, lemon juice, diced celery, and chopped chives. Mix gently until well combined. Season with salt and pepper to taste.
2. Heat a skillet over medium heat and add butter. Once melted, add the rolls and toast them until golden brown on both sides.
3. To assemble, place a lettuce leaf (if using) in each toasted roll and fill generously with the lobster mixture.

- Whole cooked lobsters: 4
- Unsalted butter: 1/2 cup (113g)
- Garlic, minced: 4 cloves
- Fresh parsley, chopped: 2 tablespoons
- Lemon juice: 2 tablespoons
- Salt: to taste
- Pepper: to taste
- Lemon wedges: for serving
Instructions
Preheat the grill to medium heat.
In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn the garlic. Stir in the lemon juice and chopped parsley. Remove from heat and set aside.
Carefully split the cooked lobsters in half lengthwise, starting at the head and working your way down the tail. Remove any remaining inner parts if necessary.
Brush the lobster meat generously with the garlic butter mixture and season with salt and pepper to taste.
Place the lobster halves on the grill, cut-side down, and grill for about 5-7 minutes, until the meat is heated through and has grill marks. Flip them over and grill for an additional 2-3 minutes, basting with more garlic butter.
