Fresh Plaice fillet

· 2 fresh plaice fillets

· 1 tbsp olive oil

· salt and black pepper, to taste

· 1 ripe mango, diced

· ½ red onion, diced

· ½ red bell pepper, diced

· 1 small jalapeño pepper, seeded and minced

· 1 small garlic clove, minced

· juice of 1 lime

· 2 tbsp chopped fresh cilantro

  1. In a small bowl, combine the mango, onion, bell pepper, jalapeño pepper, garlic, lime juice and cilantro. Season with salt and black pepper to taste. Cover and refrigerate until ready to serve.
  2. Pat the plaice fillets dry with paper towels and season both sides with salt and black pepper.
  3. Heat the olive oil in a large skillet over medium-high heat until hot. Add the plaice fillets, and cook for 3-4 minutes. Carefully flip the fillets and cook for another 2-3 minutes, or until the flesh is cooked through.
  4. Serve the pan-seared plaice fillets with the mango salsa on the side. Enjoy!
