Taste 100+ Years of Oyster Mastery: SeafoodFriday × World of Oysters
At SeafoodFriday, we’re passionate about bringing the freshest, highest-quality seafood straight to your table in Hong Kong. That’s why we’ve partnered with World of Oysters, a renowned oyster farming cooperative based in Yerseke, Netherlands. This collaboration allows us to deliver premium European oysters with unparalleled freshness, flavor, and reliability. From the pristine waters of Europe to your doorstep, our oysters embody the perfect blend of tradition, expertise, and modern sustainability practices.
Where Our Oysters Come From
Our oysters are sourced from some of Europe’s most celebrated oyster-growing regions, thanks to World of Oysters’ extensive network of trusted farmers. This cooperative brings together experienced oyster cultivators from across the continent, ensuring a diverse and exceptional selection. Daily transportation from harvesting sites around Europe—combined with state-of-the-art storage in certified purification systems—guarantees that every oyster arrives in Hong Kong at peak freshness. Whether from the nutrient-rich Dutch waters, the rugged coasts of Normandy in France, the sunny shores of Portugal, or the wild Atlantic edges of Ireland, each oyster reflects its unique terroir, influenced by local waters, tides, and climates.
Why We Chose World of Oysters as Our Partner
From the very beginning, SeafoodFriday has worked hand in hand with World of Oysters, a family-led enterprise with roots dating back to 1906. The Dhooge family has honed their craft over generations, building a cooperative of Europe’s top oyster farmers to deliver a truly special range. We selected them for their unmatched expertise, commitment to quality, and robust supply chain that handles everything from harvesting to final quality checks.
What sets World of Oysters apart is its hands-on approach: oysters are meticulously hand-selected and meet stringent European food safety standards at every step. Their ability to source from a global network while maintaining local authenticity ensures consistency and exclusivity. For us at SeafoodFriday, this partnership means we can offer Hong Kong customers oysters that are not just fresh, but extraordinary—backed by over a century of knowledge and innovation.
The Importance of Sustainability and Transparency in Choosing an Oyster Supplier
In today’s world, sustainability isn’t just a buzzword—it’s essential for preserving our oceans and ensuring future generations can enjoy these delicacies. At SeafoodFriday, we prioritise partners like World of Oysters who embody sustainable practices. Oysters take 3 to 6 years to mature, requiring careful, low-impact farming methods that respect natural ecosystems. World of Oysters’ cooperative model promotes responsible harvesting, minimising environmental strain through techniques like hanging basket cultivation and affinage in natural waters, which enhance flavour without overexploitation.
Transparency is equally vital. We believe you deserve to know exactly where your food comes from, how it’s grown, and why it’s safe. World of Oysters provides full traceability from farm to fork through certified processes that include rigorous purification and quality inspections. This openness builds trust and aligns with our values at SeafoodFriday: delivering premium products that are ethically sourced, environmentally friendly, and transparently handled. By choosing sustainable and transparent suppliers, we protect marine biodiversity, support family farmers, and offer you oysters that are as good for the planet as they are for your palate.
Our Premium Oyster Selection
Did you know it can take up to 6 years to grow a premium oyster? Each variety we offer has distinct characteristics and a flavour profile shaped by its origin. Thanks to World of Oysters’ expertise, we bring these gems directly to Hong Kong for home delivery. Here’s a closer look at our lineup:
Irish Mor Oysters
The IRISH MÓR label consists of a very strict selection of high-quality oysters from Ireland. We have teamed up with a select group of artisan oyster farmers who prioritise quality over quantity and do so in a highly sustainable way. Thanks to our broader cooperation, we have excellent full-flavoured, creamy oysters available all year round. The Irish Mór has a beautiful thick and smooth shell, with a pearly white inside and a beautiful deep cup.
Dutch Imperial Oysters
This unique Dutch Imperial Oyster of exceptional quality is cultivated by the Dhooge Family (Oesterij) in Lake Grevelingen and the Eastern Scheldt. Due to Ostrea edulis’s vulnerability, this oyster requires close attention and care from the grower. The Dutch Imperial brand is a selection of the best flat oysters from oyster farms in the waters of Zeeland, the Netherlands. After careful selection, grading, and checks, it is sold to well-known hotels and restaurants worldwide.
Dutch Special Oyster
This full, creamy Dutch Special Oyster is grown in specially designed oyster baskets attached to oyster racks. This gives the oyster its lovely, deep shape. As the Oosterschelde is among the cleanest waters in the world, and we grow both diploid and triploid oysters, these oysters are available in top quality and with their unique taste all year round. We are proud that many top chefs have chosen this unique, special oyster and we can’t wait for you to taste them!
Rock Oysters
Under our Rock Oyster label, we supply a selection of high-quality Creuse oysters from Ireland. The excellent meat content and the balance between tender and sweet are typical of our Irish Special. It owes these traits to the bays and areas around Ireland, where it is cultivated. These waters are rich in plankton and minerals – essential nutrients for oysters. World of Oysters keeps in touch every day with a selected group of passionate farmers and makes a selection from the available supply.
