Yellowtail Kingfish with Herb Crust

Fresh Yellowtail Kingfish fillet
Ingredients
550gr Yellowtail Kingfish
80gr Panko Japanese breadcrumbs or crumbed stale white bread
3 tbsp chopped parsley (first washed and diced dry then chopped)
3 tbsp chopped chervil
2 tbsp chopped dill
1 nice clove of pressed or chopped garlic
85 grams of young mature cheese finely grated
65 ml olive oil
1 tsp salt
1 knife tip cayenne pepper
1/2 lime (grater)
1/4 lime (juice)
Preparation
Mix all herb crust ingredients well, cover and place in refrigerator.
Remove the sheet and cut the bones in length from the Kingfish.
Season the fillets with salt and pepper and place them against each other in an oven-proof dish.
Now divide the herb crust evenly over the fillet and press it down.
Place the fillet (not directly under the grill) in the oven until golden brown and check the fish is cooked.
The Kingfish may still be a little glassy, it is best to cook it like a nice steak.
