Thai mussel with red pepper and coriander

Dutch blue mussels
  • 4kg mussels
  • 300gr rice
  • 3 tbsp olive oil
  • 2 onions, roughly copped
  • 2 tbsp Thai red curry paste
  • 1 red pepper copped
  • 1 piece paksoi
  • 200ml package of creamy coconut milk
  • 1 bunch of coriander, roughly copped
  • 1 lime
  1. Cook the rice according to the instructions.
  2. Heat the oil in a large tall pan. Fry the onion. Pour the curry paste, red pepper and the Pak choi in the pan. Pour the coconut milk over it. Place the mussels on top of the vegetables.
  3. Place the mussels on top of the Pak choi and add some pepper. Cook the mussels in 6-8 min. with the lid, or until all shells are open.
  4. Serve the mussels with some coriander and add the rice to a bowl. Serve with some lime.
