Spicy pasta with mussels from the oven

Ingredients
  • 300gr mussel meat (+/- 1.5 kg live mussels)
  • 400gr penne
  • 2 tbsp olive oil
  • 1 chopped onion
  • 2 crushed cloves garlic
  • 1 red pepper
  • 1 red bell pepper
  • 500gr strained tomatoes
  • 75gr black olives
  • 1 tbsp capers
  • 125 gr mozzarella, sliced
  • Basil
Preparation
  1. Heat the oven to 200ºC. Cook pasta (al dente) in plenty of salted water according to the instructions.
  2. Heat the olive oil in a frying pan. Fry the onion, garlic and red pepper. Fry the bell pepper for 3 minutes. Pour the strained tomatoes into the pan. Heat the tomato sauce on low heat for 5 minutes.
  3. Add the mussel meat, olives and capers to the sauce. Season with some salt and pepper.
  4. Drain the pasta and add to the tomato sauce. Pour into a furnace dish and top off with slices mozzarella and some pepper.
  5. Bake for around 20-25 minutes until golden brown. Sprinkle with some basil leaves.
