Fresh Yellowtail Kingfish fillet
  • 600gr Kingfish fillet without skin and bones cut into cubes 1x1 cm
  • Juice of 2 limes (if necessary, you can replace the slightly less acidic part of lime juice with tangerine juice)
  • 4 tbsp Sushi vinegar
  • Grater of 1/4 lime
  • Coriander leaves
  • (Pair of leaves for garnish)
  • 1/2 Red onion in very thin (half) rings
  • 4 mint leaves finely chopped
  • Fresh Red Chili and/or green Jalapeño pepper very thinly sliced (to taste)
  • *You can also finely chop the pepper into mini cubes.
  1. Mix everything in a basin and season with salt.
  2. Leave covered for 5 minutes and stir in between.
  3. Drizzle lightly on plate and garnish.
