Fried Yellowtail Kingfish in Sesame

Fresh Yellowtail Kingfish fillet
  • 600gr Kingfish fillets without skin cut to length.
  • Wasabi
  • Sesame black and white (possibly green wasabi-sam to sprinkle as a garnish)
  • Flower
  • Knocked-down protein
  • Salt
  1. Dab the fillets dry with kitchen paper
  2. Lubricate lightly with wasabi (2 sides)
  3. Salt the fillets (2 sides)
  4. Flower them well on both sides
  5. Get them through the protein
  6. Place the mixed sesame on a plateau and bread the fish with it.
  7. Fry them in a frying pan with plenty of sunflower oil at a very high temperature.
  8. Note this must be short and hard, the oil must be scalding. Sesame can also burn quickly.
  9. Try 1 fillet first (watch out for your hands).
  10. Take them out of the pan and put them on kitchen paper
  11. It is meant to be somewhat raw on the inside and baked on the outside.
  12. Serve (may be cold or lukewarm) with soy and wasabi.
